The JOY Challenge: Day 28 – It’s fall, y’all!

I love all things fall. Cool evenings around our backyard firepit with friends, the last of the farmer’s market, the first sweaters of the season, and, of course, pumpkin everything.

Of all my pumpkin passions, this recipe is my favorite. I hope you enjoy it too!

PUMPKIN CRISP

1 15oz can pumpkin
1 cup evaporated milk
1 cup sugar
1.5 tsp vanilla
1/2 tsp cinnamon
1 (18.25) pkg yellow cake mix
1 cup chopped pecans (optional)
1 cup butter (melted)

Stir first five ingredients and pour into greased 9×13 dish. Sprinkle cake mix/pecans on top. Drizzle butter. Bake at 350 for 60 minutes or until golden. Serve with whipped cream.
